It happens sometimes when you get to do a lot of thing in one day and it comes the lunch or dinner time and you have prepared nothing to eat. When this happens to me I do not panic, I just think in one of my several plans B that count on for easy meals.

I consider this salad one of the easiest to make, because it takes me little time and no cooking at all.

Take note of what you’ll need to make this:

  • One can of mixed veggies of 400 gr., like green peas, little chunks of carrots and sweet corn kernels.
  • Half  of a small red onion, finely chopped.
  • 6 cherry tomatoes  halves.
  • 1 low spoon of mayonnaise
  • Lemon to taste
  • Salt & pepper to taste
  • Fresh coriander branch

Let’s start with the veggies, if you happen to have these fresh than it would be much better, if not, just get your can opened and rinse it with enough of water.

Then place it on a bowl big enough to fit the rest of the ingredients. Then add the mayonnaise  and some drops of lemon juice and mix again. Put some salt and pepper to taste. (I usually use Himalayan Salt because it is known to be the purest salt available and more healthier than the table salt). But any other works good too.

Now we add the tomatoes chopped in halves and top with coriander sprinkle. Mix again and serve.

This salad taste better cold, so if you have some left over then place it in the fridge for freshness.
